Description
Discover the delicious Corfiot cuisine with a cooking class and culinary journey that will trace the gastronomic heritage of the beautiful island of Corfu. Our meeting point will be the open-air fruit & fish markets of Corfu Town We will walk through them together, choosing our fresh products, harvested from the Corfiot fields a few hours earlier, as we soak up the live theatre of local producers competing to sell their wares with the loudest of entreaties. Learn how to spot the freshest fish and choicest vegetables and herbs. Of course, the price negotiation (pazari) is all part of the experience! Next stop is a small shop for fresh dairy products including cheese and traditionally baked bread.
Once we have all our supplies, we will be transferred to a country home where the chef will demonstrate how to cook traditional Greek recipes in a wood fire oven. Most of the ingredients used are local organic products. Upon arrival, you’ll be welcomed with a sampling of local delicacies before deciding if you want to roll up your sleeves and help with the meal preparation. Or merely watch from the side-lines until your lunch is ready to be served. Either way, you are guaranteed a relaxing few hour in an idyllic setting, treated as a valued friend by your welcoming hosts. A visit to a nearby local vineyard will reveal many interesting things about Corfiot grape varieties and the local wine, as you end your epicurean adventure wrapped in the warm glow of the famous and unique Greek hospitality.

Notes
You can choose between the following menus
- MENU #1 (For meat lovers)
-Greek salad with fresh vegetables, feta and olives
-Tzatziki (refreshing dip based on yoghurt, garlic and cucumber)
Pork knuckle marinated in Corfiot beer,honey and mustard served on a bed of tomatoes, peppers and local graviera cheese
Baked apple drenched with local honey, walnuts and cinnamon Corfiot wine or beer and water
- MENU #2 (For fish lovers)
-Green salad with noumboulo (Corfiot variation of prosciutto), Kumquat ,fig paste drenched with balsamic vinegar & fig dressing
-Bruschetta with marinated white bait on dried tomato pesto sauce
-Fish wrapped in fig leaves, herbs and olive oil grilled in the wood fire oven accompanied with beetroot and garlic-beetroot dip
-Kumquat cheesecake Corfiot wine or beer and water
- MENU 3 (For Vegetarian lovers)
-Salad with thin slices of baby courgettes marinated in lemon and orange juice topped with local graviera cheese
-Vegetable briam (fresh tomatoes, peppers, zuchhini, aubergines with olive oil and herbs) grilled in the wood fire oven served with feta cheese and slices of fresh cherry tomatoes
-Greek yoghurt with honey and fresh fruits

Important Note:
- Only one of the above menus will be applied
- Main courses are grilled in traditional wood fire oven, a method widely used decades ago but not so common now days
- In the salads preparation we use only virgin olive oil
- We try to support the local producers so most of the ingredients used are local organic products
- Beverages, wine or beer served during the classes are all Corfiot products
