Description
Inside this vast and verdant estate, where vine and olive cultivation has existed for more than 400 years, a simple and adaptable space has been created to showcase the elements of traditional Corfiot architecture. The estate was acquired by the ancestors of today’s owners in 1600 when they emigrated from Venice to Corfu.
Today, a quarter of the total expanse (of approx. 74.000 sqm) is given over to newly-planted vineyards and olive groves. The rest has been preserved as pristine Mediterranean forest. Corfu has been a wine producing island since antiquity (references can be found in Homer's Odyssey). Meanwhile, the cultivation of olive trees became widespread during the Venetian occupation of Corfu, between 1386 and 1797, when olive oil was an important commodity. Not so much as food but as a lighting source.
Let’s begin our flavourful adventure with a special welcome refreshment (choose from a herbal tea such as lemon verbena, lavender and lemon or a chilled red wine with citrus fruits). Next, the owner of the vineyard and restaurant will share the family history of this marvellous property, with an introduction to the vineyard, and a wrap-up of the processes behind traditional olive and wine making. Enlighten yourself at the exhibit of pre-industrial equipment, used for the production of wine and olive oil, before getting acquainted with the estate’s old Corfiot grape varieties:
Red “skopelitiko”and white “kakotrigis” - that are spun into delicious wines by traditional methods and aged in oak barrels. Next it’s time to lay the groundwork for an understanding of the famous Corfiot cuisine and the Corfiot culinary culture. We’ll drive the lessons home by tasting some local home-made products such as tsipouro and/or wine, and many others depending on the season of your visit.
Now, you’re ready to cook delicious authentic recipes using your newfound knowledge, along with the freshest seasonal ingredients. Finally, you’ll sit down to enjoy a 5-course meal comprised of over 15 different authentic local dishes (cooked and prepared by you, with some help from the owner), and accompanied by their own wines. The menu varies according to the availability of ingredients and your preferences.

Notes
• The wine served is locally produced on the estate in the traditional way with no additives or preservatives and is aged in oak barrels
• All grapes are grown in situ on the vineyard
• Only extra virgin olive oil and local herbs are used in the dishes
• Vegetarian, vegan or gluten free dishes are also available.
• All fruits, vegetables, herbs and flowers (cultivated locally or grown wild on the estate) are used to make unique artisan and natural products
• You will also receive a copy of the owner’s cookbook with authentic Corfiot recipes
• The menu varies according to the season and to local ingredients availability
• Your menu consists of a choice of 1 starter, bread, 1 salad, 1 first course, 1 main course and 1 dessert
• Starters: tzatziki or melitzanosalata smoked eggplant salad, or taramosalata - cod cured roe salad
• Bread: homemade whole wheat and multigrain wine bread
• Salads: Ambelonas' green salad with walnuts seeds, raisins and a Corfiot sweet fruit or “neratzosalata” – sweet orange with hot paprika and extra virgin olive oil or “Ambelonas’ Summer” salad with tomatoes, cucumbers and green peppers
• First course: Pie with sesame and honey or Risotto with topinambour (Jerusalem artichoke), celery, carrot, onion, colourful peppers, turmeric and Greek pecorino cheese
• Main course: Pork “DOLCE GARBO” slowly cooked in wine & wine vinegar with onions, rosemary and spices (served with basmati rice) or Beef “SOFRITO” – thin slices of beef slowly fried and cooked with wine, garlic and parsley (served with potatoes) or Chicken fillet baked with yogurt, mint and lemon (served with couscous) or Veal “FRICADO” slowly cooked with white wine, onion, celery, carrots and spices (served with pasta - farfalle)
• Dessert: Ambelonas’ spice cake with aromatic syrup served with strained yogurt sauce and a fruit (in season) sauce or Corfiot pudding with walnuts, raisins and bergamot -served with apricot jam , chocolate sauce and almonds
