Authentic Kimolos ladenia is considered being one of the oldest recipes of pizza, without cheese, using just tomatoes, onion and virgin olive oil. It is an original Kimolian cuisine recipe, which grandmothers used to cook since decades in Kimolos. Even though the ingredients are few and simple, Ladenia is just delicious! You can’t leave Kimolos without tasting this delicious Cycladic "pizza”. The original recipe of this first, Greek pizza, only Kimolian grandmothers could reveal to us. Let them guide us step by step in preparing this simple, but delicious recipe.
Ingredients
500gr. flour for all uses
5 grams of dry yeast
3 tomatoes cut into thin slices
2 dried onions cut into thin slices
Salt
Pepper
Sugar
Virgin Olive oil (7 tablespoons) Lukewarm water.
Preparation
In lukewarm water, (about 1 cup), dissolve the yeast with 1 pinch of sugar and then add the flour, some virgin olive oil (2 tablespoons), and 1 teaspoon chopped salt. Add lukewarm water, slowly until a dough is formed that has elasticity and is not too tight. Then spread a pan with virgin olive oil (5 tablespoons), place the dough inside, spread it to cover the surface of the pan and cover it, waiting for it to rise and become double in volume. When this happens, place the thinly sliced vegetables (tomatoes and onions) on its surface, drill the entire surface of the dough with a fork and add some virgin olive oil, a little salt and freshly ground pepper. Finally, bake the ladenia in a preheated oven at 200 degrees Celsius for approximately 40 minutes to 1 hour.
